1- What factors do you consider when choosing a restaurant to feature on ‘Dine with colors’?
Our team is responsible for selecting restaurants to feature on our show. We begin by choosing a location, and then we select one Indian restaurant and one non-Indian restaurant to feature. When considering Indian restaurants, we look for those that have an interesting angle or story, and that offers high-quality cuisine. We also consider reviews, but these are not the only factors, as we also want to highlight lesser-known, small restaurants that may not have many reviews, but are still highly regarded by locals for their food. For non-Indian restaurants, we follow a similar process, with the added goal of introducing our Indian audience to new cultures through the stories and experiences of the chefs. We prioritize chefs who enjoy conversation and storytelling, as this helps to provide a rich, regional context for the dishes we showcase.
2- Can you share a dish from your childhood that you could eat daily without ever getting tired of it, and why?
One dish from my childhood that I could eat every day without growing tired of is warm goat cheese on toast. This dish brings back memories of reading one of my favorite books, Heidi, and the idea of enjoying it with a glass of milk transports you to Switzerland! Another dish that I enjoy and that brings back happy memories is Bhurjee, scrambled eggs with onions and tomatoes, eaten with Indian bread called ‘paratha’. This is a favorite breakfast and midnight snack that reminds me of sleepovers with the family. Eggs are comfort food for me and will always be a go-to option.
3- When you’re not cooking or eating delicious food, how do you like to spend your free time?
When I have free time, I often like to spend it alone, finding happiness in simple pleasures. This might include taking a walk, enjoying a cup of coffee at dawn, reading, writing poetry by moonlight, and practicing introspection and meditation. I also enjoy picnics, although I could easily spend a long time talking about the food, I like to include it in my picnic baskets!
4- Tell us something about your experience of hosting ‘Dine with Colors’
I am grateful to have the opportunity to share the stories of restaurant owners and chefs and they’re often challenging and inspiring career journeys in America. I respect the hardworking staff, the time and hospitality given by restaurant owners and staff, and the diverse cultures and traditions represented in the show. I am also thankful to the entire team for putting in the effort and helping me with the enlightening experience of doing the show.
