It is going to be that time of the year again. Navratri is a celebration of nine days during which Goddess Durga is worshipped and most people observe fast. Delicacies such as Sabudana khichdi, fruit chaat, kheer and kuttu ki poori are some of the most popular dishes cooked during the Navratri season. Chef Sunny also shared his experience of how he came up with the idea of this interesting fusion dish ‘Thai Basil Paneer’. He shared, “Some people are tired of eating potatoes every day. So, to make them taste something special during the festivities, Thai Basil Paneer is our go-to dish. The recipe is simple, and anyone can easily prepare it during Navratri also because the recipe doesn’t include onion or Garlic. So those observing Fast during this festival can always cook and serve this healthy recipe.”

Thai Basil Paneer recipe 

  • Pour a little vegetable oil into the pan
  • Add Green Peppers, Yellow peppers, and Red Bell Peppers and toss it for 2-3 mins.
  •  Pour about 1 cup of coconut milk
  • Then add fresh Basil
  • Add salt to taste
  • 2 spoons of dry Basil powder
  • Add Paneer and a little bit of water.
  • Just a little bit of Soy sauce to enhance the taste
  • Your healthy Navratri special Thai Basil Paneer is ready to serve. You can eat it with rice or even with Naan.

Chatpate Khaste Aaloo:

Chef Sunny shared, “The speciality of this dish is that it requires only those ingredients that are most found or readily available in anyone’s kitchen. For example- around 4-5 guests visit your place uninvited during the festival and you don’t have many groceries left in your kitchen, Chatpate Khasta Aaloo can be easily prepared with potato, coriander and some basic spices then this dish requires only 4-5 mins of your time, and you can easily impress your guests.”

Chatpate Khaste Aaloo recipe: 

  • 2 tsp butter
  • 1 spoon of Cumin seeds
  • boiled/mashed potatoes
  • ½ tsp of salt
  • Crushed pepper/ chili flakes
  • Mix it well and pour 1 spoon of tamarind pulp
  • Add chopped green chilly
  • Add freshly chopped coriander leaves
  • It is ready to serve. You can eat it with Puri.
